I created these out of my love for Peanut Sauce…
No, not "authentic" Peanut Sauce . No, not actual "sushi".
Dontcha just hate when we have to be sooo PC haha.
Anyway friends, I hope you'll love these little rolls as much as I do!!
For the Rolls
2 Nori Sheets
1 Small Carrot, Matchsticked
10+ Thin Slices of Cucumber
Little bowl of water (for closing up roll seams)
1 Cup Cooked Quinoa (meaning 1 cup after it has been cooked)
For the Sauce
1 Tbsp Tamari
3 Tbsp Peanut Butter
1/4 tsp Garlic Powder
Lime Juice – I use about 1 tsp because I love lime!
Now let's put it together!
1) Cook quinoa as directed and allow to cool (about 15 mins)
2) Once cooled, thoroughly stir in Peanut Butter, Garlic Powder, Tamari and give a generous squeeze of lime juice. Taste mixture and adjust if needed.
Preparing Your Sushi Roll
With the rough side up (facing you), lay the nori sheet on a flat surface – I roll mine on a wooden cutting board.
Using about 1/2 of the quinoa mixture, place onto Nori Sheet like so…
Flatten and spread the quinoa out evenly, but not right to the edge (as shown).
You'll want to make sure your quinoa is not piled on too thick, as you still need to stuff with veggies. So just use your best judgement
Next, take a few of your carrots and cucumbers and place like so:
Roll Time!
Don't be nervous, just be gentle. There is definitely no need for all that fancy gear you may think is involved. Your mixture is sticky, thus being the magic in "rolling made easy".
Your first 'turn' of the Nori sheet should take you just before the veggies.
Pull back on the sheet, keeping it nice and tight, then continuing the rolling process.
Once you come to the end of your roll, you may see that it is somewhat dry. This will cause your roll to come undone…
Simply dip your fingers in some water and run along the seam – This will seal it up!
Slicing: The best way to slice your sushi roll is with a very sharp knife. I actually find that the boning knife from my knife block works perfectly.
Wiping down the blade and running it under hot water after each cut is the secret to achieving smooth slices.
And there you have it – Delicious and filling Peanut Sauce Sushi Rolls.
