This is a great potato side dish for any meal. I particularly love it on the side of Indian dishes, such as this delicious Vegan Chana Masala.
Quick note: Always adjust spices to your preference. Remember that recipes are made with the personal taste of someone else. That being said, I do hope you enjoy these lovely potatoes!
You Will Need:
3 Medium Potatoes (or approx 4-5 cups once chopped)
1/4 tsp Salt
1/4 tsp Pepper
1/2 tsp Paprika
1/4 tsp Turmeric
1/2 tsp Dried Parsley Flakes
1/4 to 1/2 tsp Garlic Powder (your pref)
4 cups *Kale (chopped)
*You can sub any dark leafy greens (even green beans) if you do not have kale ?
Preheat oven to 375°
Chop potatoes into chunks; I do about 12 per potato. Half, half again, then chopped into thirds.
Steam or boil the potatoes for roughly 8 minutes. You do not want them fully cooked, just slightly fork tender.
Once done, toss potatoes in a big bowl along with a drizzle of olive oil (about 1/2 Tbsp), spices and chopped kale; making sure all pieces are coated nicely.
In an 8×8 dish add about 1/3 cup water or veggie broth and place potato/kale mixture in.
Bake at 375 for approx 30 minutes.
Give potatoes and kale a quick stir half way through to insure nothing is sticking or burning.
At the halfway point, you may need to add a TBSP or more of water. Do not flood the bottom, as once this dish is done, you want the liquid to pretty much be evaporated.
Once potatoes are done, give a generous splash of lemon juice and toss together.
