A flavorful Spanish Rice that easily comes together for a quick weeknight side dish or burrito filling. Don't forget any favorite toppings, such as fresh avocado, or some delicious vegan sour cream! Let's get started…
You Will Need:
2 cups uncooked rice
1 cup black beans, precooked (or canned)
1 small Onion, diced
2 large cloves Garlic, minced
1/2 cup Salsa
1/4 tsp Cumin
1/2 tsp Turmeric
1 Tbsp fresh Parsley
1 Tbsp fresh Cilantro
Vegetable Broth, or Water
Salt | Pepper | Lime Juice
* If you are using dry herbs, use 1 tsp
In a large pot, water (or broth) sauté your onions until soft (about 5 mins).
Add in minced garlic and cook down for another minute or so.
Next, add in your 2 cups uncooked rice, 1/2 cup salsa, 1/4 tsp cumin, 1/2 tsp turmeric and enough water (or veggie broth) to cover the rice. About 3-4 cups.
Mix together and bring to a rolling boil.
Once boiling, add your 1 cup of Black Beans, lower heat, cover and simmer.
After about *15 minutes, remove cover and allow liquid to reduce down until almost gone. This should take (about) 6 minutes.
Remove from heat.
Stir in Cilantro, Parsley and give a generous squeeze of lime juice. Salt and Pepper to your preference…Enjoy!
*NOTE The amount of time needed for your rice will depend on which kind you are using. I used brown Minute Rice. If your rice is still quite crunchy after 15 minutes, keep covered and check in increments of 2 minutes. Once softened, remove and allow liquid to reduce.
