Sweet Potato Aloha Burgers

Aloha, Friends!
This patty contains a delicious taste of the tropics perfect for any light meal night!

If you're a reader of my blog, you'll know one of my biggest pet peeves is yammering on for 6 paragraphs before getting to the recipe.  It's a patty – Make it, eat it, and I hope you'll enjoy it laugh

You Will Need
1 Flax Egg
1/4 tsp Salt
1 tsp Cumin
1 Can Chickpeas 
1 Med. Carrot, shredded
1/4 – 1/2 Cup Quick Oats
1 Tbsp Shredded Coconut
1 Cup Pineapple Chunks (reserve juice)
1 tsp Soy Sauce (I use Gluten Free Tamari)
1 Heaping Tbsp Fresh Parsely, Cilantro (or both!)
1 Med (or Half a Large) Sweet Potato, pre-baked
* Make your flax egg first and set aside (1 Tbsp Flax Meal + 3 Tbsp Water whisk and allow to come together)

Into your blender add:
1 Can Chickpeas
1 Cup Pineapple Chunks (NOT with the juice)

Pulse together until just nicely combined then empty into a large bowl.  Alternatively, you can mash them together by hand, with a fork; just make sure they resemble something like below 🙂

1 tsp Tamari (or soy sauce)
1 Medium Carrot, shredded
1 Med-Large (pre-baked) Sweet Potato
1 Heaping Tbsp Fresh Parsley / Cilantro (or both!)

sweet potato aloha burger ingredients in bowl wifetime of happinessNext, add in 1/4 to 1/2 cup of Quick Oats and stir through just to combine
Quick Oats Sweet potato Aloha Burgers Wifetime of HappinessCover the mixture bowl and place into the fridge for 2-3 hours.  The longer, the better as this gives the flavors time to blend and the mixture to firm up nicely.  Make sure to place your reserved pineapple juice into the fridge as well.

Time to Bake!
Preheat oven to 400°F 
Cover a large baking sheet with parchment paper. If you do not have one, 2 regular size should be fine.

For measuring out the patties I use a 1/3 measuring cup. This should give you 10 decent sized patties.

After 25 minutes, flip burgers and brush on another layer of pineapple juice
Place back into the oven for another 20 minutes or so.
You want them to be crispy on the top (as shown in the pic) and softer in the middle.​

*Keep in mind your cooking (and flip) time will vary depending on the size of your patties.
If they don't flip easily, give them a few more minutes 🙂


Allow patties to rest for about 5 minutes before serving.
I like to eat mine wrapped in Romaine lettuce, topped with any leftover pineapple chunks and coconut yogurt.

NOTE: If you'd like to grill these bad boys, I suggest using the same directions as above (refrigerate 2-3 hours) and then using a grill mat. The best thing about these mats?  You still get grill marks!  How cool is that.  Can we say delicious summertime BBQ?
