Easy Chicken CasseroleThrow this easy, "cheat" chicken casserole together in minutes. Perfect for those busy weeknights, when there's just not enough time.
Even though I am a stay-at-home housewife, I find myself more often than not, in some sort of time crunch. Hey, I'm not knockin' us housewives – We know damn well it's hard work…But when I think of other people hearing the word "housewife" I tend to believe they are picturing Peg Bundy and her bon-bons :)) So like, here I am trying to justify myself, even though I know I don't have to haha.
Okay, so the reason I dubbed this recipe "cheat" chicken casserole, is because we're using basic ingredients that many pantry's already have on hand. So no, I won't be asking you to slow roast a 24 hour marinated chicken or pick the finest organic tomatoes you can find. This is real life, buddy and sometimes real life involves just having to whip something up in a jif!
Alright, onto the recipe. Feel free to tweak it however you like!
Easy "Cheat" Chicken Casserole
1/2-1 tsp Garlic Powder
5 Cups (Dried) Egg Noodles
2 5g Cans Flaked Chicken, drained
1/4 tsp Black Pepper (give or take)
1 Cup Frozen Veggies (your choice)
1 Jar Ragu Creamy Mozzarella Sauce
1 Tbsp Dried Onion Flakes, rehydrated
1 Cup Whole Wheat Panko (Or any bread crumbs)
1 Canned Diced Tomatoes (about 2 Cups), drained but RESERVE JUICE
• Preheat Oven to 375°
• Spray a 9 x 13 Casserole Dish
• In a little bowl add 1 Tbsp water to 1 Tbsp Dried Onion Flakes
• Boil noodles until al dente,
• Transfer to sprayed casserole dish
…and give a little mix.
To Your Mixture Add..
1 Jar Ragu Creamy Mozzarella
About 1/4 Cup Reserved Juice from Canned Tomatoes
…Stir together until well combined.
Top with (approx) 1 Cup Panko, or your choice of bread crumbs.
Pop in the oven for 20 minutes, or until thoroughly heated and top is toasty.
